Half Moon is a medium roast half-caff coffee blend combining beans from Cerrado, Minas Gerais, Brazil, produced by the Veloso Family, and Oaxaca, Mexico, grown by CORO Organic Coffee Growers. These coffees are cultivated at elevations ranging from 1,066–1,500 meters above sea level and processed using the washed method, contributing to clarity, balance, and consistent structure in the cup.
This blend is composed of a 50/50 combination of fully caffeinated coffee and decaffeinated coffee, creating a balanced cup with reduced caffeine while maintaining full flavor development.
Half Moon presents a smooth, medium-bodied profile with layered notes of walnut, sticky toffee pudding, and vanilla bean. The structure is rounded with moderate acidity and a soft, clean finish, making it approachable across brewing methods. It performs well as both espresso and filter coffee, and its balanced sweetness allows it to integrate naturally with milk in drinks like lattes and cappuccinos.
The decaffeinated component is sourced from Rainforest Alliance certified farms in Mexico and is kosher certified, reflecting sustainable agricultural practices and careful processing at origin.
